Ingredients

  • 3 tomatoes (finely chopped)
  • 1 onion
  • 1 tsp ginger-garlic paste
  • Spices: turmeric, red chilli, coriander powder
  • Salt
  • Sugar (optional)
  • Nylon sev
  • Oil

Step-by-step

Onion sauté
Step 1 — Sauté onion

Heat oil, add cumin and onions and cook until soft.

Tomato masala
Step 2 — Add tomatoes & spices

Add tomatoes, ginger-garlic paste, all the spices and salt. Cook until tomatoes soften.

Curry simmering
Step 3 — Simmer

Add a splash of water and let the curry cook for 5–7 minutes.

Sev topping
Step 4 — Garnish

Turn off flame and top generously with sev before serving.

Tips & Variations

  • Add garlic tadka for extra flavour.
  • Use thick sev for chewy texture, thin sev for crunchy texture.
  • Add green peas for a fuller curry.
