Ingredients
- 3 tomatoes (finely chopped)
- 1 onion
- 1 tsp ginger-garlic paste
- Spices: turmeric, red chilli, coriander powder
- Salt
- Sugar (optional)
- Nylon sev
- Oil
Step-by-step
Step 1 — Sauté onion
Heat oil, add cumin and onions and cook until soft.
Step 2 — Add tomatoes & spices
Add tomatoes, ginger-garlic paste, all the spices and salt. Cook until tomatoes soften.
Step 3 — Simmer
Add a splash of water and let the curry cook for 5–7 minutes.
Step 4 — Garnish
Turn off flame and top generously with sev before serving.
Tips & Variations
- Add garlic tadka for extra flavour.
- Use thick sev for chewy texture, thin sev for crunchy texture.
- Add green peas for a fuller curry.
