Ingredients
- 2 potatoes (cubed)
- 2 cups spinach
- 1 onion (chopped)
- 1 tomato (pureed)
- 1 tsp ginger-garlic paste
- Spices: turmeric, chilli, coriander powder
- ½ tsp garam masala
- Salt
- Oil
Step-by-step
Step 1 — Prep spinach
Blanch and blend spinach into a smooth puree.
Step 2 — Sauté onion
Heat oil and cook onions until golden.
Step 3 — Add tomato & spices
Add tomato puree and spices; cook until oil separates.
Step 4 — Add spinach puree
Lower flame and mix in spinach puree.
Step 5 — Add potatoes & simmer
Add semi-boiled potatoes and cook for 7–8 minutes.
Tips & Variations
- Add 1 tbsp fresh cream for richer gravy.
- Use baby spinach for milder flavour.
- Do not overcook spinach — it loses colour.
