Ingredients
- 2 large onions, thinly sliced
- 1 cup besan
- 2 tbsp rice flour (optional)
- 1–2 green chillies
- 1 tsp red chilli powder
- ½ tsp turmeric
- 1 tsp ajwain
- Salt to taste
- Handful coriander leaves
- Oil for frying
Step-by-step
Step 1 — Slice onions
Slice onions thinly and mix with salt to release moisture.
Step 2 — Add flours & spices
Add besan, rice flour, chillies, ajwain, turmeric and chilli powder.
Step 3 — Mix into batter
Use onion moisture to bind. Add little water if required.
Step 4 — Fry
Drop small portions and fry on medium heat until golden.
Step 5 — Serve
Serve hot with chutney or ketchup.
Tips & Variations
- Add spinach or cabbage for extra volume.
- Use hot oil in batter for extra crispiness.
- Do not add too much water — pakodas become soggy.
- Add crushed coriander seeds for a crunchy bite.
