Ingredients

  • Baati:
  • 2 cups wheat flour
  • 4 tbsp ghee
  • Salt as needed
  • Warm water

  • Onion–Garlic Mix:
  • 1 onion (finely chopped)
  • 6–7 garlic cloves (chopped)
  • 2 green chillies (chopped)
  • 1 tbsp coriander
  • Salt & lemon juice

  • Aloo Sabji:
  • 3 boiled potatoes
  • 1 tomato
  • Mustard & cumin seeds
  • Turmeric, red chilli, coriander powder
  • Salt
  • 1 tbsp oil

Step-by-step

Dough
Step 1 — Prepare the Baati dough

Mix aata, ghee and salt. Add warm water and knead a stiff dough.

Baati baking
Step 2 — Shape & cook baatis

Form lemon-sized balls. Bake at 180°C or pan-cook until golden and crisp.

Onion garlic mix
Step 3 — Prepare Onion–Garlic Mix

Mix onion, garlic, chillies, coriander, salt & lemon. Keep aside.

Aloo sabji
Step 4 — Cook Aloo Sabji

Heat oil → mustard & cumin → tomato → spices → crumbled potatoes. Cook 5–7 mins.

Serving baati
Step 5 — Serve

Break baati, pour ghee, top with onion-garlic-chilli mix and enjoy with hot aloo sabji.

Tips & Variations

  • Add smoked ghee for authentic dhaba-style flavour.
  • For spicy version, increase green chillies in the raw mix.
  • Serve with achar or lehsun chutney for enhanced taste.
