Ingredients
- Baati:
- 2 cups wheat flour
- 4 tbsp ghee
- Salt as needed
- Warm water
- Onion–Garlic Mix:
- 1 onion (finely chopped)
- 6–7 garlic cloves (chopped)
- 2 green chillies (chopped)
- 1 tbsp coriander
- Salt & lemon juice
- Aloo Sabji:
- 3 boiled potatoes
- 1 tomato
- Mustard & cumin seeds
- Turmeric, red chilli, coriander powder
- Salt
- 1 tbsp oil
Step-by-step
Step 1 — Prepare the Baati dough
Mix aata, ghee and salt. Add warm water and knead a stiff dough.
Step 2 — Shape & cook baatis
Form lemon-sized balls. Bake at 180°C or pan-cook until golden and crisp.
Step 3 — Prepare Onion–Garlic Mix
Mix onion, garlic, chillies, coriander, salt & lemon. Keep aside.
Step 4 — Cook Aloo Sabji
Heat oil → mustard & cumin → tomato → spices → crumbled potatoes. Cook 5–7 mins.
Step 5 — Serve
Break baati, pour ghee, top with onion-garlic-chilli mix and enjoy with hot aloo sabji.
Tips & Variations
- Add smoked ghee for authentic dhaba-style flavour.
- For spicy version, increase green chillies in the raw mix.
- Serve with achar or lehsun chutney for enhanced taste.
