Ingredients
- Garlic cloves – 15 to 18
- Dried red chillies – 8 to 10 (soaked)
- Tomato – 1 small (optional)
- Oil – 1 tbsp
- Turmeric, chilli powder, salt
- Cumin seeds – 1/2 tsp
- Lemon juice – 1 tsp
Step-by-step
Step 1 — Soak red chillies
Soak dried red chillies in warm water for 10 minutes to soften.
Step 2 — Blend chutney
Blend garlic, soaked chillies, tomato and salt into a smooth paste.
Step 3 — Season the chutney
Heat oil, add cumin, turmeric & chilli powder. Add chutney paste and cook for 2–3 mins.
Step 4 — Finish
Add lemon juice and let it cool. Store airtight.
Tips & Variations
- Add 1 tsp sesame seeds for richer texture.
- Use Kashmiri chillies for bright red colour with less heat.
- Add 1 tbsp curd for a milder version.
- Stays fresh for 7 days in fridge.
