Ingredients

  • 2 cups fresh methi leaves
  • 2 potatoes (cubed)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • ¼ tsp turmeric
  • 1 tsp red chilli powder
  • Salt to taste
  • ½ tsp garam masala (optional)
  • Garlic (optional)

Step-by-step

Potatoes
Step 1 — Prep potatoes

Peel and cube potatoes, rinse and keep aside.

Tempering
Step 2 — Heat oil

Add cumin seeds to hot oil and let them crackle.

Cook potatoes
Step 3 — Add potatoes & spices

Add turmeric, chilli powder and salt. Cook 5–7 minutes.

Methi
Step 4 — Add methi

Add fresh methi leaves and let them wilt completely.

Final cook
Step 5 — Cook until soft

Cover, cook until potatoes turn soft. Finish with garam masala.

Tips & Variations

  • Sprinkle lemon juice to balance methi bitterness.
  • Add garlic for stronger flavour.
  • Do not add water — cook on low flame for best texture.
