Ingredients

  • 1 cup semolina
  • 1 cup curd
  • Mixed veggies: onion, carrot, capsicum
  • Chilli, coriander
  • Mustard seeds & curry leaves
  • Baking soda/Eno
  • Salt
  • Oil

Step-by-step

Batter mixing
Step 1 — Prepare batter

Mix semolina with curd & water. Rest 10 mins.

Chopped vegetables
Step 2 — Add vegetables

Add onion, carrot, capsicum, chilli & coriander.

Tempering
Step 3 — Tempering

Add mustard seeds & curry leaves tempering to batter.

Add Eno
Step 4 — Add soda/Eno

Add baking soda/Eno and mix gently.

Cooking appe
Step 5 — Cook appe

Pour batter in appe pan, cook both sides until golden.

Tips & Variations

  • Add grated beetroot for colour.
  • Add cheese cubes for kids’ version.
  • Use thick curd for softer appe.
  • Serve with green chutney or sambar.
