Ingredients
- 1 cup semolina
- 1 cup curd
- Mixed veggies: onion, carrot, capsicum
- Chilli, coriander
- Mustard seeds & curry leaves
- Baking soda/Eno
- Salt
- Oil
Step-by-step
Step 1 — Prepare batter
Mix semolina with curd & water. Rest 10 mins.
Step 2 — Add vegetables
Add onion, carrot, capsicum, chilli & coriander.
Step 3 — Tempering
Add mustard seeds & curry leaves tempering to batter.
Step 4 — Add soda/Eno
Add baking soda/Eno and mix gently.
Step 5 — Cook appe
Pour batter in appe pan, cook both sides until golden.
Tips & Variations
- Add grated beetroot for colour.
- Add cheese cubes for kids’ version.
- Use thick curd for softer appe.
- Serve with green chutney or sambar.
