Ingredients

  • 1 cup semolina (suji/rava)
  • 1 onion (finely chopped)
  • 1 green chilli (chopped)
  • 1 small carrot (chopped)
  • 6-8 curry leaves
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal (optional)
  • 2 tbsp oil or ghee
  • 2 cups hot water
  • Salt to taste
  • Fresh coriander
  • 1 tsp lemon juice (optional)

Step-by-step

Roast suji
Step 1 — Roast semolina

Dry roast suji on medium flame until light golden and aromatic. Keep aside.

Prepare tadka
Step 2 — Prepare tadka

Heat oil or ghee → add mustard seeds, urad dal, curry leaves, green chilli and chopped onion.

Add vegetables
Step 3 — Add vegetables

Add chopped carrot and sauté 2 minutes.

Add suji to water
Step 4 — Add water & suji

Add hot water + salt, then slowly add roasted suji while stirring to avoid lumps.

Serve upma
Step 5 — Steam & serve

Cook covered for 2 minutes. Add lemon juice and coriander. Serve hot.

Tips & Variations

  • Add green peas or capsicum for extra flavor.
  • Use ghee for a richer aroma.
  • Squeeze lemon just before serving for freshness.
  • Roasting suji well prevents lumps.
