Ingredients
- 1 cup semolina (suji/rava)
- 1 onion (finely chopped)
- 1 green chilli (chopped)
- 1 small carrot (chopped)
- 6-8 curry leaves
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal (optional)
- 2 tbsp oil or ghee
- 2 cups hot water
- Salt to taste
- Fresh coriander
- 1 tsp lemon juice (optional)
Step-by-step
Step 1 — Roast semolina
Dry roast suji on medium flame until light golden and aromatic. Keep aside.
Step 2 — Prepare tadka
Heat oil or ghee → add mustard seeds, urad dal, curry leaves, green chilli and chopped onion.
Step 3 — Add vegetables
Add chopped carrot and sauté 2 minutes.
Step 4 — Add water & suji
Add hot water + salt, then slowly add roasted suji while stirring to avoid lumps.
Step 5 — Steam & serve
Cook covered for 2 minutes. Add lemon juice and coriander. Serve hot.
Tips & Variations
- Add green peas or capsicum for extra flavor.
- Use ghee for a richer aroma.
- Squeeze lemon just before serving for freshness.
- Roasting suji well prevents lumps.
