Ingredients
- 2 potatoes (boiled & mashed)
- 1 cup cauliflower (chopped)
- ½ cup green peas
- ½ cup capsicum (chopped)
- 1 onion (chopped)
- 2 tomatoes (chopped)
- 1 tbsp ginger-garlic paste
- 1.5 tbsp pav bhaji masala
- 1 tsp red chilli powder
- ½ tsp turmeric
- Butter
- Salt to taste
- Coriander leaves
- Pav buns (4)
Step-by-step
Step 1 — Boil vegetables
Boil potatoes, peas and cauliflower until soft. Mash lightly.
Step 2 — Sauté onions
Heat butter, sauté onions until golden, then add ginger-garlic paste.
Step 3 — Add tomatoes & spices
Add tomatoes, turmeric, chilli powder, pav bhaji masala and salt. Cook until mushy.
Step 4 — Mash the bhaji
Add boiled veggies and mash well while cooking on medium flame.
Step 5 — Add butter & simmer
Add butter and water to adjust consistency. Simmer for 5 minutes.
Step 6 — Toast pav
Toast pav with butter and a sprinkle of bhaji masala.
Tips & Variations
- Use Amul butter for classic Mumbai flavor.
- Add a cube of butter on top before serving.
- Use Kashmiri red chilli for bright color.
- Sprinkle lemon juice for tanginess.
